Ingredients

  • 1 cup diced cooked turkey
  • 3 cups turkey or chicken broth
  • 1/4 cup butter
  • 2 tbsp chopped onion
  • 1 tsp curry powder
  • 1 cup diced potatoes
  • 1/2 cup diced carrots
  • 1/2 cup celery sliced diagonally
  • salt and pepper to taste
  • 1/2 package frozen peas
  • 1 tsp minced fresh oregano or 1/2 tsp dried
  • 1 tbsp minced parsley
  • 1 can evaporated milk

Instructions

  1. Sauté onion in butter until transparent. Stir in curry powder and cook one minute longer.
  2. Add potatoes, carrots, celery, broth, and seasoning to taste. Bring to a boil over low heat.
  3. Stir in peas, turkey, oregano, and parsley. Cook until vegetables are barely tender but still crisp.
  4. Combine milk and flour and gently stir into the soup until well blended. Cook until slightly thickened.
  5. Check and adjust seasoning before serving.
