Ingredients

  • 32 oz. can tomato juice
  • 14 1/2 oz. can stewed tomatoes or fresh
  • 2 cups water
  • 2 medium potatoes, chopped (unpeeled)
  • 15 oz. can garbanzo beans, drained
  • 15 oz. can kidney beans, drained
  • 1 cup lentils, rinsed and drained
  • 1 large onion, chopped
  • 2 tsp. garlic powder
  • 1 cup red peppers, seeded and diced
  • 1 cup green peppers, seeded and diced
  • 10 oz. package frozen spinach
  • 2 carrots, grated
  • 2 Tbsp. dried parsley or 1/4 cup fresh
  • 2 Tbsp. chili powder
  • 2 tsp. dried basil leaves

Instructions

  1. In a 4 1/2-quart pot, combine all ingredients.
  2. Bring the mixture to a boil, then reduce heat.
  3. Simmer, covered, about 30 to 45 minutes or until lentils are tender.
