Ingredients

  • 6 lb. pork loin
  • 3 tsp. salt
  • 1 tsp. pepper
  • 1 tsp. thyme
  • 2 tsp. nutmeg
  • 2 carrots
  • 2 onions
  • 2 cloves garlic
  • 4 whole cloves
  • celery leaves
  • 3 bay leaves
  • 10.5 oz. can consomme
  • 1/2 cup water
  • parsley leaves

Instructions

  1. Preheat oven to 450°F.
  2. Rub the pork loin with salt and pepper.
  3. Bake uncovered for 20 minutes.
  4. Reduce oven temperature to 350°F.
  5. Arrange sliced carrots, onions, garlic, cloves, celery leaves, parsley leaves, and bay leaves around the roast.
  6. Pour in water and consomme into the roasting pan.
  7. Cook uncovered for 2 hours, basting frequently.
  8. Remove the roast from the oven and place on a platter.
  9. Skim off excess fat from the liquid.
  10. Work the vegetables and liquid through a sieve to strain.
  11. Serve the strained vegetables and sauce alongside the roast.
