  • 8 oz. Neufchatel cream cheese
  • 1/2 cup sour cream
  • 1 scallion
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon dried tarragon
  • 1 teaspoon grated lemon zest

  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon Tabasco sauce
  • 3/4 pound frozen cooked shrimp, thawed and coarsely chopped
  • 1 round loaf pumpernickel bread
  • assorted vegetables

Instructions

  1. In a bowl with a mixer at medium speed, beat the cream cheese with sour cream until very smooth.
  2. Stir in chopped scallion, parsley, tarragon, lemon zest, garlic powder, salt, pepper, and Tabasco until combined.
  3. Stir in the chopped shrimp.
  4. Chill the mixture for at least 1 hour.
  5. Using a serrated knife, cut off the top one-third of the pumpernickel loaf horizontally.
  6. With a small knife, cut around the inside edge of the bread, then pull out the bread in large pieces, leaving a 1/2-inch thick shell.
  7. Cut the removed bread top and pieces into 1-inch cubes.
  8. Just before serving, place the loaf on a serving platter.
  9. Fill the bread shell with the shrimp dip.
  10. Serve with bread cubes and assorted vegetables.
