Ingredients

  • 1 cup raisins
  • 1 cup sugar
  • 1/2 cup butter
  • 1 cup water
  • 1 teaspoon cinnamon
  • 1 1/2 teaspoons allspice
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1/2 cup chopped pecans
  • 1/2 cup melted butter
  • 2/3 cup firmly packed brown sugar
  • 1/2 cup firmly packed coconut

Instructions

  1. Preheat oven to 325 degrees Fahrenheit.
  2. Combine raisins, sugar, butter, water, cinnamon, and allspice in a saucepan.
  3. Bring to a boil and cook for two minutes.
  4. Add 2 cups of flour, baking soda, and chopped pecans to the saucepan.
  5. Mix thoroughly and pour the batter into a greased 9-inch by 13-inch pan.
  6. Spread the batter evenly over the bottom of the pan.
  7. Bake for 20 minutes at 325 degrees Fahrenheit.
  8. Meanwhile, combine melted butter, brown sugar, coconut, 1 tablespoon of flour, and 1 cup of pecans to make the frosting.
  9. Mix well until creamy.
  10. Remove the cake from the oven and spread the frosting evenly over it.
  11. Return the cake to the oven and bake for an additional 20 minutes.
