Ingredients

  • 3 c. flour
  • 2 c. sugar
  • 1 tsp. soda
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 3 eggs
  • 1 1/2 c. oil
  • 1 c. chopped nuts
  • 1 c. coconut
  • 2 c. dried bananas
  • 1 large can crushed pineapple, drained
  • 1 1/2 tsp. vanilla

Instructions

  1. Preheat oven to 350°F (175°C). Grease two loaf pans.
  2. In a large bowl, mix flour, sugar, baking soda, salt, and cinnamon.
  3. In a separate bowl, blend the eggs and then add the oil.
  4. Add the blended eggs and oil mixture to the dry ingredients and mix well.
  5. Stir in the chopped nuts, coconut, dried bananas, crushed pineapple, and vanilla until evenly combined.
  6. Divide the batter evenly between the two prepared loaf pans.
  7. Bake for 1 hour to 1 hour and 20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow to cool slightly before removing from pans and slicing.
