Ingredients

  • 1 c. brown rice
  • 2 Tbsp. olive oil
  • 1/2 c. chopped onion
  • 1/2 c. chopped celery
  • 1/2 c. chopped white mushrooms
  • 2 c. chicken broth
  • 1/2 tsp. thyme
  • 1/2 tsp. crushed oregano
  • 1/8 tsp. coarsely ground pepper
  • 2 c. grapes
  • 2 Tbsp. chopped parsley
  • 1/2 c. chopped almonds or Macadamia nuts

Instructions

  1. Brown rice in olive oil; remove from skillet and set aside.
  2. Cook and stir onions and celery in the same skillet.
  3. Add mushrooms, chicken broth, rice, thyme, crushed oregano, and coarsely ground pepper; stir well.
  4. Simmer, covered, for 25 to 30 minutes or until rice is cooked and liquid is absorbed.
  5. Stir in grapes, chopped nuts, and parsley; cook about 2 minutes or until grapes are thoroughly heated.
