Ingredients

  • 3/4 cup all-purpose flour
  • 1/2 teaspoon dried thyme, divided
  • 1/4 teaspoon salt
  • 1 egg yolk
  • 2 cups plus 3 tablespoons cold water, divided
  • 1 pound skinless chicken thighs
  • 5 cups chicken broth
  • 1 medium onion, chopped
  • 1 medium carrot, sliced
  • 3/4 cup frozen peas, thawed

Instructions

  1. Mix flour, 1/4 teaspoon thyme, and salt in a bowl.
  2. Beat egg yolk with 3 tablespoons water in a small bowl; add to flour mixture.
  3. Stir until well blended. Shape into a ball.
  4. Place dough on a lightly floured surface; flatten and knead about 5 minutes until smooth and elastic, adding more flour if necessary.
  5. Wrap dough in plastic and let stand for 15 minutes.
  6. In a large pot, cook chicken thighs in chicken broth until cooked through, about 20-25 minutes.
  7. Remove chicken, shred or chop, and set aside.
  8. In the same pot, add chopped onion and sliced carrot; cook until vegetables are tender, about 5-7 minutes.
  9. Roll out the dough and cut into noodles, then add to the broth and cook until tender, about 3-5 minutes.
  10. Add shredded chicken and thawed peas to the soup; cook for another 2-3 minutes.
  11. Season with remaining thyme if desired, then serve hot.

Tips & Substitutions

For a richer flavor, consider adding a splash of soy sauce or a few drops of sesame oil to the broth. You can substitute chicken thighs with skinless chicken breasts if preferred, but thighs usually yield a juicier result. For a vegetarian version, use vegetable broth and replace chicken with diced tofu or mushrooms. Fresh herbs like parsley or dill can also enhance the dish.

Serving Suggestions

Serve the noodle soup hot, garnished with fresh herbs like parsley or green onions for an extra burst of flavor. Pair it with crusty bread or a light salad for a complete meal. This soup also makes a comforting starter alongside dishes like Pat'S Shepherds Pie or Cheesy Veggie Soup.

Storage & Reheating

Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, add a splash of water or broth to prevent the noodles from becoming too soft, and warm gently on the stove or in the microwave. Freezing is not recommended as the noodles may become mushy upon thawing.
