Ingredients

  • 2 Tbsp. olive oil
  • 1/2 c. chopped onion
  • 1/2 c. chopped celery
  • 1 clove garlic, minced
  • 2 cans (15 oz. each) black-eyed peas
  • 8 oz. kielbasa, thinly sliced
  • 1 c. uncooked converted rice
  • 1/4 tsp. crushed red pepper
  • 1 can (14 oz.) chicken broth

Instructions

  1. In a large skillet, sauté onion, celery, and garlic in hot olive oil until the onion is soft.
  2. Stir in the remaining ingredients. Heat to a boil; reduce heat and cover tightly.
  3. Simmer for 30 to 40 minutes or until the liquid is absorbed.
