Ingredients

  • 2 c. flour
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 1 1/2 c. huckleberries
  • 1/2 c. walnuts, chopped
  • 1/2 c. plus 2 Tbsp. maple syrup
  • 2 eggs
  • 3/4 c. margarine, melted

Instructions

  1. Sift together the flour, baking powder, and salt.
  2. In a separate bowl, beat together the maple syrup, eggs, and melted margarine.
  3. Fold in the huckleberries and chopped walnuts into the wet mixture.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Pour batter into a greased loaf pan and bake at 350°F (175°C) for about 45 minutes or until a toothpick inserted into the center comes out clean.
