  • 1 1/2 c. sour cream
  • 1 1/2 c. cooked wild rice
  • 1 1/2 c. cooked white rice or 3 c. cooked noodles

Instructions

  1. Trim fat from beef and cut filet crosswise into 1/2-inch thick slices.
  2. Cut each slice across the grain into 1/2-inch wide strips, about 2 inches long.
  3. Slowly heat a large, heavy skillet over medium heat.
  4. Melt 1 tablespoon of butter in the skillet.
  5. Add beef strips, just enough to cover the skillet bottom, and sear quickly on all sides over high heat.
  6. Remove the beef with tongs as it finishes browning, ensuring it is brown on the outside and rare inside.
