Ingredients

  • 2 lb. beef, cut in 1 1/2-inch cubes
  • 3 Tbsp. bacon fat
  • 3 beef bouillon cubes
  • 3 c. boiling water
  • 1 medium onion, sliced
  • 1 clove garlic
  • 1 Tbsp. salt
  • 1 Tbsp. lemon juice
  • 1 tsp. sugar
  • 1 tsp. pepper
  • 1 tsp. paprika
  • 1 tsp. allspice

Instructions

  1. Brown the beef slowly in bacon fat on all sides in a large pan.
  2. Place sliced onions on top of the browned meat.
  3. Dissolve the beef bouillon cubes in boiling water and pour over the meat and onions.
  4. Add salt, lemon juice, sugar, pepper, paprika, allspice, Worcestershire sauce, and bay leaf.
  5. Cover and simmer the mixture for 3 hours until the beef is tender.
  6. Discard the bay leaf and garlic cloves.
  7. Add the sliced water chestnuts, carrots, potatoes, and onions to the stew.
  8. Cook the vegetables in the stew until tender, or add canned vegetables and heat thoroughly.
  9. Thicken the gravy by blending 1/4 cup of flour with 1/2 cup cold water and stir into the stew.
  10. Stir until the gravy is evenly blended and serve hot over biscuits.
