Ingredients

  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 lb ground beef
  • salt
  • pepper
  • 1 (8 oz) package noodles
  • 1 can whole kernel corn
  • 1 can mushroom soup
  • 1 can mushroom pieces (optional)
  • 1 jar pimentos

Instructions

  1. In a skillet, brown the ground beef; add chopped onion, salt, pepper, and seasonings; cook until beef is no longer pink.
  2. Cook the noodles according to package instructions and set aside.
  3. Add canned corn, mushroom soup, mushroom pieces (if using), pimentos, and cream cheese to the meat mixture; stir until the cheese melts and the mixture is well combined.
  4. Pour the meat and sauce mixture into a casserole dish.
  5. Add the cooked noodles on top of the mixture.
  6. Bake in a preheated oven at 350°F (175°C) for 20 to 25 minutes until heated through and bubbly.
