Instructions

  1. Split the acorn squash in half and scoop out the strings and seeds.
  2. Cut the squash into quarters and steam for 30 minutes or until very soft. Scoop out the pulp and set aside.
  3. In a skillet, melt the butter and add the oil.
  4. When hot, add the chopped onion and sauté until wilted.
  5. Add the cubed potato to the skillet and stir.
  6. Cook for 15 minutes.
  7. Place the potato mixture, chicken stock, and squash pulp in a large kettle.
  8. Bring to a boil, then stir in the thyme.
  9. Simmer the soup for 25 minutes.
  10. Let the soup cool slightly and puree in a blender.
  11. Return the pureed soup to the kettle, stir in the milk, and heat again.
  12. Serve hot, sprinkled with Parmesan cheese and minced parsley.
