Ingredients

  • 2 1/2 cups cornmeal
  • 1 cup flour
  • 2 tablespoons sugar
  • 1 tablespoon salt
  • 8 teaspoons baking powder
  • 3 eggs
  • 1 1/2 cups milk
  • 1/2 cup oil
  • 1 (1 lb) can cream corn
  • 1 cup chopped green chiles or jalapeños
  • 1 large onion, grated
  • 2 cups grated sharp cheese

Instructions

  1. Mix cornmeal, flour, sugar, salt, and baking powder in a bowl.
  2. Set aside. Lightly beat eggs, milk, and oil in a separate bowl.
  3. Add the egg mixture to the dry ingredients, then stir in cream corn, chopped chiles or jalapeños, grated cheese, and grated onion. Mix well.
  4. Pour the batter into a greased 13 x 9-inch pan.
  5. Bake at 425°F (220°C) for 25 minutes until golden and cooked through.
