Ingredients

  • 3 cups flour
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon soda
  • 3 eggs
  • 2 cups sugar
  • 1 1/2 cups salad oil
  • 8 ounces crushed pineapple, undrained
  • 1 cup chopped pecans
  • 1 1/2 teaspoons vanilla
  • 2 cups chopped ripe bananas

Instructions

  1. Combine the dry ingredients (flour, salt, cinnamon, soda) in a large bowl.
  2. Add eggs and salad oil, stirring without beating.
  3. Stir in vanilla, pineapple, bananas, and pecans.
  4. Spoon batter into floured and greased tube pan or three 9-inch well-greased and floured cake pans.
  5. Bake at 350°F for 55 to 60 minutes for the tube pan or 25 to 30 minutes for the cake pans.
  6. Cool in the pan for 10 minutes, then remove from pans and cool completely.
  7. Frost with Cream Cheese Frosting.
