Ingredients

  • 1 to 2 Tbsp. horseradish
  • 3/4 c. ketchup
  • 1/4 c. water
  • 1/2 onion, chopped
  • 1/4 c. butter, melted
  • 3 Tbsp. lemon juice
  • 1 Tbsp. mustard
  • 3 Tbsp. brown sugar
  • 1 Tbsp. Worcestershire sauce
  • 1/2 tsp. chili powder
  • 1 to 2 lb. beef sirloin
  • fresh vegetables (mushrooms, zucchini, cherry tomatoes, onion, peppers, etc.)

Instructions

  1. Mix the horseradish, ketchup, water, chopped onion, melted butter, lemon juice, mustard, brown sugar, Worcestershire sauce, and chili powder to create the marinade.
  2. Marinate the beef sirloin in the sauce for at least 3 hours.
  3. If using wood skewers, soak them in water for 15 minutes before assembling the kabobs.
  4. Thread the marinated beef and fresh vegetables onto skewers.
  5. Grill the kabobs 4 to 6 inches from the coals for 8 to 10 minutes, turning twice, until cooked to desired doneness.

Tips & Substitutions

For extra flavor, consider marinating the beef overnight. If you don't have horseradish, prepared mustard can work as a substitute. You can also use chicken or tofu for a different protein. If grilling, ensure your grill is preheated for optimal searing. Vegetables should be cut into uniform pieces for even cooking, and try adding pineapple for a sweet twist.

Serving Suggestions

Serve Jan's Kabobs with a side of rice or a fresh salad for a complete meal. They pair beautifully with a dipping sauce like yogurt or tzatziki. You can also serve them alongside grilled corn on the cob or roasted potatoes. For a fun twist, try serving them with the flavors found in Beef & Potato Stew.

Storage & Reheating

Leftover kabobs can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, place them on a grill or in a skillet over medium heat until warmed through. You can also use the microwave, but be careful not to overcook, as that can make the meat tough.

Frequently Asked Questions

Can I use other meats besides beef for kabobs?

Absolutely! Chicken, pork, or even shrimp can be great alternatives. Just adjust the marinating time according to the protein used; chicken may need about 2-4 hours, while pork can be marinated similarly to beef.

What kind of vegetables work best for grilling?

Great choices include bell peppers, zucchini, cherry tomatoes, and mushrooms. They hold up well on the grill and add vibrant colors to your kabobs. Ensure they are cut into similar sizes as the meat for even cooking.

Can I make the marinade ahead of time?

Yes, you can prepare the marinade a day in advance and store it in the refrigerator. This allows the flavors to meld together, enhancing the overall taste of your kabobs. Just remember to give it a good stir before using.
