Ingredients

  • 2 onions, chopped
  • 1 green pepper, chopped
  • 1 celery, chopped
  • 2 cloves garlic, chopped
  • 2 Tbsp. oil
  • 4 lb. ground beef
  • 2 (14 1/2 oz.) cans stewed tomatoes (undrained)
  • salt
  • 1 (15 oz.) can tomato sauce
  • 1 (6 oz.) can tomato paste
  • 1/4 cup green chili salsa
  • 3/4 cup chili powder
  • 1 (4 oz.) can diced green chilies

Instructions

  1. In a Dutch oven, sauté the chopped onions, green pepper, chopped celery, and chopped garlic in hot oil until tender.
  2. Add the ground beef, one pound at a time, until the meat loses its redness.
  3. Drain excess fat from the meat mixture.
  4. Add water to the meat mixture.
  5. Stir in the stewed tomatoes, tomato sauce, tomato paste, green chili salsa, chili powder, and diced green chilies, stirring after each addition.
  6. Simmer the chili for 2 1/2 hours, stirring frequently, and season to taste.
