Kasha Varnishkas are hearty, savory grain and noodle dish with fried onions, perfect as a flavorful side for family dinners or festive gatherings.

Ingredients

  • 1 c. coarse kasha
  • 1 egg
  • 2 c. chicken broth
  • 2 Tbsp. butter
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1/2 lb. bow tie noodles
  • 4 large onions

Instructions

  1. Heat chicken broth to boiling in a deep pan.
  2. Beat the egg lightly with a fork in a bowl.
  3. Add the kasha to coat the kernels with the egg.
  4. Put the coated kasha in the pan and heat on a medium flame, stirring until the egg has dried and the kernels are separate.
  5. Reduce heat to low and stir in the remaining ingredients, then cover the pan.
  6. Heat for 8 to 11 minutes until all liquid is absorbed.
  7. Mix the cooked kasha with the bow tie noodles and fried onions, then serve.
