Ingredients

  • 5 bacon strips
  • 1 medium onion, chopped
  • 1 to 1 1/2 lb. smoked fully cooked kielbasa, thinly sliced
  • 2 cans (15 1/2 oz. each) Great Northern beans, undrained
  • 2 (8 oz.) cans tomato sauce
  • 1 (4 oz.) can chopped green chilies
  • 2 medium carrots, thinly sliced
  • 1/2 medium green pepper, chopped
  • 1/2 tsp. Italian seasoning
  • 1/2 tsp. dried thyme
  • 1/8 tsp. pepper

Instructions

  1. In a 12-inch skillet, cook bacon until crisp; remove to paper towel to drain.
  2. In the drippings, cook onion and sausage until the onion is tender; drain.
  3. Stir in remaining ingredients; bring to a boil.
  4. Reduce heat, cover, and simmer for 45 minutes or until vegetables are tender, stirring occasionally.
  5. Crumble bacon and sprinkle on top.
