Tips & Substitutions
For a more robust flavor, marinate the lamb overnight in spices and oil. You can substitute the lamb with chicken or beef if desired. If you prefer a vegetarian option, replace the meat with extra chickpeas and add more vegetables. Adjust the spices to your taste, and consider adding a splash of lemon juice for brightness.
Serving Suggestions
Serve this hearty lamb stew over the couscous, allowing the grains to absorb the flavorful broth. Pair it with a fresh salad, such as a Green Bean, Tomato And Salami Salad, for a refreshing contrast. A dollop of yogurt on top can add a creamy texture, and crusty bread is great for soaking up any remaining sauce.
Storage & Reheating
Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, gently warm it on the stovetop over medium heat, adding a splash of water if necessary to prevent sticking. This dish also freezes well for up to 2 months; just defrost in the fridge before reheating.

Frequently Asked Questions
Can I use a different type of meat in this recipe?
Yes, you can substitute the lamb with chicken or beef. Just adjust the cooking time accordingly, as chicken cooks faster than lamb. For a vegetarian version, use more chickpeas and additional veggies to maintain the dish's heartiness.
What can I serve with lamb couscous?
Lamb couscous pairs beautifully with light salads or roasted vegetables. Consider serving it alongside a Mediterranean recipe like a simple cucumber and tomato salad, or a dollop of tzatziki for added flavor and creaminess.
How do I make the couscous fluffy?
To achieve fluffy couscous, ensure you use the right water-to-couscous ratio as per the package instructions. After cooking, let it sit covered for a few minutes, then fluff it gently with a fork to separate the grains.
