Ingredients

  • 2 lb. lamb shoulder
  • 1/4 c. flour
  • salt and pepper
  • 2 Tbsp. vegetable oil
  • 2 medium onions
  • 3 c. boiling water
  • 1/8 tsp. marjoram
  • 1 1/2 c. peas

Instructions

  1. Have lamb cut into 2-inch cubes and trim excess fat. Roll each piece in seasoned flour.
  2. Heat vegetable oil in a skillet and add the floured lamb pieces. Add sliced onions and brown the lamb well on all sides.
  3. Pour off excess oil, then add boiling water. Cover and simmer slowly for 1 1/2 hours.
  4. Add vegetables and marjoram to the pot. Continue cooking until carrots are tender.
  5. Remove the meat and vegetables to a casserole or baking dish.
  6. Thicken the gravy and pour it over the meat and vegetables.
  7. Cover with canned biscuits and bake until biscuits are golden and done.
