Lasagna Spinach Bake

Ingredients

  • 1 cup chopped onions
  • 2 cups sliced celery
  • 2 tablespoons margarine
  • 2 cans (15 oz.) Chef Boyardee lasagna
  • 1 can (12 oz.) luncheon meat, cubed
  • 2 cups fresh bread crumbs
  • 1 cup shredded Cheddar cheese
  • 2 packages (10 oz.) frozen chopped spinach, cooked and drained
  • 1/4 cup Parmesan cheese

Instructions

  1. Preheat oven to 375°F.
  2. Saute onions and celery in margarine until tender.
  3. Add lasagna and luncheon meat; mix well.
  4. Spread half the lasagna mixture in the bottom of a 12 x 8 x 2-inch dish.
  5. Combine 1 cup bread crumbs and 1/2 cup Cheddar cheese.
  6. Sprinkle this mixture over the lasagna layer.
  7. Place cooked and drained spinach over the bread crumb layer.
  8. Sprinkle spinach with Parmesan cheese.
  9. Spread the remaining lasagna mixture over the spinach.
  10. Combine 1 cup bread crumbs, 1/2 cup Cheddar cheese, and margarine; toss to combine.
  11. Sprinkle this mixture over the casserole.
  12. Bake at 375°F for 25 minutes.
