Layer Tortilla Pie

Ingredients

  • 1 lb. ground beef
  • 1 medium onion, chopped
  • 1 (8 oz.) can tomato sauce
  • 1 garlic clove, minced
  • 1 Tbsp. chili powder
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 (2 1/2 oz.) can sliced ripe olives, drained (optional)
  • 1 Tbsp. butter or margarine
  • 6 corn tortillas (6-inches)
  • 2 c. (8 oz.) shredded Cheddar cheese
  • 1/4 c. water

Instructions

  1. In a skillet, brown beef and onion; drain fat.
  2. Add tomato sauce, garlic, chili powder, salt and pepper.
  3. Add olives, if desired.
  4. Mix well and simmer for 5 minutes.
  5. Lightly butter tortillas on one side only.
  6. Place on tortilla, buttered side down, in a 2-quart round casserole.
  7. Spoon about 1/2 cup of meat mixture on the tortilla, then sprinkle about 1/3 cup cheese.
  8. Repeat layers, ending with cheese.
  9. Pour water around the sides of casserole (not over the top).
  10. Cover and bake at 400° for 20 minutes or until heated through.
  11. Let stand for 5 minutes before cutting.
  12. Makes 4 to 6 servings.
  13. Serve with shredded lettuce and sour cream, if desired.
