Ingredients

  • 1/3 cup all-purpose flour
  • 2/3 cup packed brown sugar
  • 2 cups milk
  • 2 egg yolks
  • 2 tablespoons butter or margarine
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 4 to 6 firm bananas
  • chopped walnuts (optional)

Instructions

  1. In a medium saucepan, combine the flour and brown sugar.
  2. Stir in the milk; cook and stir over medium heat until thickened and bubbly.
  3. Cook and stir for 1 minute more.
  4. Remove from the heat. Gradually stir about 1 cup hot mixture into the beaten egg yolks.
  5. Return all to the saucepan.
  6. Bring to a gentle boil; cook and stir for 2 minutes.
  7. Remove from the heat; stir in butter and vanilla.
  8. Cool to room temperature, stirring occasionally.
  9. Fold in the whipped cream.
  10. Layer sliced bananas and pudding in a serving dish, optionally sprinkling chopped walnuts between layers.
  11. Refrigerate before serving.
