Ingredients

  • 4 chicken breasts
  • fresh cilantro
  • butter
  • oil
  • 8 oz. cream cheese, softened
  • 8 oz. jar salsa
  • 8 oz. shredded cheese
  • 2 cans of enchilada sauce
  • 12 corn tortillas

Instructions

  1. Cut the chicken breasts into small pieces and place them into a frying pan with melted butter.
  2. Season the chicken with fresh cilantro.
  3. Cook for 5 minutes or until the chicken is white and cooked through.
  4. In a mixing bowl, soften the cream cheese and combine with salsa.
  5. Add shredded cheese to the mixture and stir well.
  6. Warm the enchilada sauce in a saucepan.
  7. Wrap the cooked chicken in corn tortillas and place in a baking dish.
  8. Pour enchilada sauce over the assembled tortillas.
  9. Spread the cheese and salsa mixture over the top.
  10. Bake until bubbly and cheese is melted, about 15 minutes.
