Ingredients

  • 3/4 cup sugar
  • 1 tablespoon corn oil margarine
  • 1/3 cup applesauce
  • 3 ripe bananas
  • 1 egg
  • 1 egg white
  • 1/2 teaspoon vanilla
  • 1 3/4 cups cake flour
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 350°F.
  2. Cream together sugar, margarine, and applesauce.
  3. Blend in mashed bananas, eggs, and vanilla.
  4. Sift cake flour, salt, and baking soda three times.
  5. Fold the dry ingredients into the banana mixture.
  6. Pour batter into a 9 x 5-inch loaf pan sprayed with cooking spray.
  7. Bake for 55 minutes.
  8. Allow to cool before slicing.
