Linguine Paradise

- 2 lean chicken breasts ⓘ
- 1/2 lb. scallops ⓘ
- 1/2 lb. medium size shrimp, cleaned and deveined
- 1 hot sausage ⓘ
- 1 green bell pepper ⓘ
- 1 medium onion ⓘ
- 2 Tbsp. minced garlic ⓘ
- 16 oz. linguine noodles ⓘ
- 3 Tbsp. butter or margarine ⓘ
- 16 oz. crushed tomatoes ⓘ
- 8 oz. tomato sauce ⓘ
- 1 bay leaf ⓘ
- 2 Tbsp. oregano ⓘ
- 2 Tbsp. salt ⓘ
- 2 Tbsp. olive oil ⓘ
- 4 oz. Burgundy wine ⓘ
- 8 oz. Mozzarella cheese
- 2 Tbsp. Parmesan cheese ⓘ
Instructions
- Chop the onion and green bell pepper.
- Heat olive oil in a heavy pan and sauté the chopped onion and green bell pepper.
- Add cubed chicken breasts and sauté until light brown.
- Add 1 teaspoon of salt, 1 teaspoon oregano, and 8 ounces of tomato sauce; cook on low-medium heat.
- In a separate saucepan, melt butter and add minced garlic.
- Add scallops and shrimp to the garlic and butter mixture and set aside.
- Add crushed tomatoes, wine, Parmesan cheese, hot sausage (after browning), and remaining spices to the chicken mixture.
- Continue to cook the sauce for 30 minutes on low-medium heat.
- Add scallops and shrimp to the sauce and cook for an additional 20 minutes.
- Add mozzarella cheese and cook until cheese melts.
- Cook 16 ounces of linguine in boiling water for 7 to 8 minutes, adding garlic and oregano to the water.
- Drain linguine and serve topped with the prepared sauce, garnished with fresh parsley.
