Ingredients

  • 2 lean chicken breasts
  • 1/2 lb. scallops
  • 1/2 lb. medium size shrimp, cleaned and deveined
  • 1 hot sausage
  • 1 green bell pepper
  • 1 medium onion
  • 2 Tbsp. minced garlic
  • 16 oz. linguine noodles
  • 3 Tbsp. butter or margarine
  • 16 oz. crushed tomatoes
  • 8 oz. tomato sauce
  • 1 bay leaf
  • 2 Tbsp. oregano
  • 2 Tbsp. salt
  • 2 Tbsp. olive oil
  • 4 oz. Burgundy wine
  • 8 oz. Mozzarella cheese
  • 2 Tbsp. Parmesan cheese

Instructions

  1. Chop the onion and green bell pepper.
  2. Heat olive oil in a heavy pan and sauté the chopped onion and green bell pepper.
  3. Add cubed chicken breasts and sauté until light brown.
  4. Add 1 teaspoon of salt, 1 teaspoon oregano, and 8 ounces of tomato sauce; cook on low-medium heat.
  5. In a separate saucepan, melt butter and add minced garlic.
  6. Add scallops and shrimp to the garlic and butter mixture and set aside.
  7. Add crushed tomatoes, wine, Parmesan cheese, hot sausage (after browning), and remaining spices to the chicken mixture.
  8. Continue to cook the sauce for 30 minutes on low-medium heat.
  9. Add scallops and shrimp to the sauce and cook for an additional 20 minutes.
  10. Add mozzarella cheese and cook until cheese melts.
  11. Cook 16 ounces of linguine in boiling water for 7 to 8 minutes, adding garlic and oregano to the water.
  12. Drain linguine and serve topped with the prepared sauce, garnished with fresh parsley.
