Ingredients

  • 3 Tbsp. oil
  • 8 chicken giblets
  • 8 chicken livers
  • 2 lb. ground beef
  • salt and pepper
  • 1 c. bell pepper, chopped
  • 2 c. onions, chopped
  • 2 garlic cloves, chopped
  • 1 c. celery, chopped
  • 1 c. green onions, chopped
  • 1 c. parsley
  • 2 c. rice, cooked

Instructions

  1. Boil chicken livers and giblets until tender.
  2. Place giblets in a food processor and chop until fine.
  3. Chop chicken livers coarsely with a knife.
  4. Saute onions, garlic, and celery in oil.
  5. Add ground beef and cook until done.
  6. Add all ingredients except parsley and cook for approximately 1 hour, adding a small amount of water to prevent sticking.
  7. Season with salt and pepper to taste.
  8. Mix the cooked mixture with the cooked rice and garnish with parsley.
