Flavorful and portable, these lunch box burritos combine seasoned ground beef, refried beans, and melted cheese wrapped in soft tortillas—perfect for a satisfying meal on the go.

Ingredients

  • 1 lb. lean ground beef
  • 1 (16 oz.) can refried beans
  • 2/3 cup enchilada sauce
  • 1/4 cup water
  • 3 tablespoons minced onions
  • 1 1/2 teaspoons chili powder
  • 1 1/2 teaspoons garlic powder
  • 3/4 teaspoon salt
  • 1/2 teaspoon dried oregano
  • 15 to 20 flour tortillas
  • 1/2 lb. (2 cups) shredded Cheddar cheese

Instructions

  1. Brown the ground beef and drain excess fat.
  2. Add refried beans, enchilada sauce, water, minced onions, chili powder, garlic powder, salt, and oregano to the beef.
  3. Simmer the mixture for 20 minutes.
  4. Prepare the tortillas and shredded cheese.
  5. Place each tortilla on a paper towel.
  6. Put about 1/4 cup of the meat mixture along one side of each tortilla.
  7. Sprinkle with 2 tablespoons of shredded cheese.
  8. Roll up the tortilla to enclose the filling.
  9. Wrap the burrito in a paper towel and then in foil.
  10. Refrigerate or freeze until ready to serve.
