Ingredients

  • 1 c. all-purpose flour
  • 1 c. yellow corn meal
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 tsp. soda
  • 3 Tbsp. margarine
  • 2 Tbsp. brown sugar
  • 2 eggs
  • 1/3 c. pure maple syrup
  • 3/4 c. buttermilk
  • 1/2 c. chopped pecans

Instructions

  1. Combine flour, corn meal, baking powder, soda, and salt in a bowl.
  2. Set aside.
  3. In a mixing bowl, combine margarine, brown sugar, and eggs; mix well.
  4. Add maple syrup and buttermilk to the mixture.
  5. Stir in the dry ingredients just until moistened.
  6. Fold in the chopped pecans.
  7. Pour the batter into a greased 8 1/2 x 4 1/2 x 2 1/2-inch loaf pan.
  8. Bake in a preheated oven at 350° for 35 to 40 minutes or until a toothpick inserted in the center comes out clean.
  9. Cool for 10 minutes in the pan before transferring to a wire rack.
