Ingredients

  • 2 lb. shrimp, cooked and peeled
  • 2 medium onions, sliced
  • 2 small green peppers, sliced
  • 4 carrots, sliced and cooked
  • 10 3/4 oz. can tomato soup
  • 1/2 c. vinegar
  • 1/2 c. salad oil
  • 3/4 c. sugar
  • 1 Tbsp. prepared mustard
  • 2 cucumbers, sliced

Instructions

  1. Combine the cooked, peeled shrimp with sliced carrots, onions, and green peppers; set aside.
  2. Mix together the tomato soup, vinegar, salad oil, sugar, and prepared mustard until well blended.
  3. Pour the marinade over the shrimp and vegetables.
  4. Gently mix to coat all ingredients evenly.
  5. Refrigerate overnight to allow flavors to meld.
  6. Before serving, add sliced cucumbers on top.
