Mexican Franks are flavorful, cheesy wraps filled with chili, chili peppers, and frankfurters, perfect for a hearty snack or quick meal that appeals to all ages.

Ingredients

  • 10 tortillas
  • 1 can (15 oz.) chili without beans
  • 1 (8 oz.) can tomato sauce
  • 1 Tbsp. minced onions
  • 1 cup (4 oz.) shredded Cheddar cheese
  • 1/4 tsp. hot sauce
  • 1 (4 oz.) can chopped chilies
  • 10 frankfurters

Instructions

  1. Combine chili, 1/4 cup tomato sauce, minced onions, and hot sauce to make the chili mixture.
  2. Place a frankfurter in the center of each tortilla.
  3. Top each frankfurter with 2 tablespoons of the chili mixture.
  4. Roll up the tortillas and place seam side down in a lightly greased 11 x 7 x 1 1/2-inch baking dish.
  5. Repeat with remaining tortillas and set aside.
  6. Combine the remaining chili mixture with the tomato sauce and pour over the assembled tortillas.
  7. Sprinkle chopped chilies over the top.
  8. Cover and bake at 350°F for 25 minutes.
  9. Uncover and sprinkle with shredded Cheddar cheese.
  10. Bake an additional 5 minutes until cheese is melted and bubbly.
