Ingredients

  • 3 eggs
  • 1 cup yellow cornmeal
  • 1/2 cup bacon drippings
  • 1 cup chopped onion
  • 1/2 cup bell pepper
  • 1 can cream-style corn
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 pound hamburger, drained and rinsed
  • 1 pound grated Cheddar cheese
  • 2 jalapeno peppers, sliced

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a baking dish evenly.
  3. In a mixing bowl, combine all ingredients: eggs, cornmeal, bacon drippings, chopped onion, bell pepper, cream-style corn, baking soda, salt, cooked hamburger, grated Cheddar cheese, and sliced jalapenos.
  4. Mix until well combined.
  5. Pour the mixture into the greased baking dish.
  6. Bake in the preheated oven for 45 minutes or until cooked through and golden on top.
