Ingredients

  • 3 lb. ground chuck
  • 3 diced onions
  • 4 Tbsp. chili powder
  • 1 (6 oz.) can tomato paste
  • 2 (15 oz.) cans tomato sauce
  • 2 tsp. salt
  • 4 Tbsp. sugar
  • 2 c. water
  • 1 tsp. oregano
  • 2 (15 oz.) cans pinto beans
  • corn chips
  • rice
  • diced onions
  • chopped olives
  • picante sauce
  • grated cheese
  • diced tomatoes
  • mushrooms
  • shredded lettuce

Instructions

  1. Brown the ground chuck with diced onions in a large skillet.
  2. Drain off excess fat from the meat and onions.
  3. Add chili powder, salt, oregano, tomato paste, tomato sauce, sugar, and water; stir to combine.
  4. Reduce heat to low and simmer uncovered for 1 hour, stirring occasionally.
  5. Prepare toppings: diced tomatoes, chopped olives, mushrooms, shredded lettuce, grated cheese, picante sauce, and any other desired condiments.
  6. To assemble each serving, layer corn chips, rice, meat sauce, cheese, and toppings in a bowl or plate according to personal preference.
