- 3 lb. ground chuck ⓘ
- 3 diced onions ⓘ
- 4 Tbsp. chili powder ⓘ
- 1 (6 oz.) can tomato paste ⓘ
- 2 (15 oz.) cans tomato sauce ⓘ
- 2 tsp. salt ⓘ
- 4 Tbsp. sugar ⓘ
- 2 c. water ⓘ
- 1 tsp. oregano ⓘ
- 2 (15 oz.) cans pinto beans ⓘ
- corn chips ⓘ
- rice ⓘ
- diced onions ⓘ
- chopped olives ⓘ
- picante sauce ⓘ
- grated cheese ⓘ
- diced tomatoes ⓘ
- mushrooms
- shredded lettuce ⓘ
Instructions
- Brown the ground chuck with diced onions in a large skillet.
- Drain off excess fat from the meat and onions.
- Add chili powder, salt, oregano, tomato paste, tomato sauce, sugar, and water; stir to combine.
- Reduce heat to low and simmer uncovered for 1 hour, stirring occasionally.
- Prepare toppings: diced tomatoes, chopped olives, mushrooms, shredded lettuce, grated cheese, picante sauce, and any other desired condiments.
- To assemble each serving, layer corn chips, rice, meat sauce, cheese, and toppings in a bowl or plate according to personal preference.
