Ingredients

  • 1 1/2 lb. lean ground beef
  • 1 1/2 c. thinly sliced carrots
  • 1 c. thinly sliced celery
  • 2 c. hot water
  • 1 1/2 c. instant rice
  • 1 envelope onion soup mix
  • 1 bay leaf

Instructions

  1. Combine ground beef coarsely into a 3 to 5-quart casserole.
  2. Mix in sliced carrots and celery.
  3. Cover and microwave on High for 3 1/2 to 6 1/2 minutes or until beef is set, stirring once or twice.
  4. Add hot water, instant rice, onion soup mix, and bay leaf.
  5. Microwave, covered, for 12 to 18 minutes, or until vegetables are tender, stirring once or twice.
  6. Remove bay leaf before serving.
