Ingredients

  • 1 cup plain white cornmeal
  • 4 cups water
  • 1/2 cup chopped onion
  • 1 can (2 cups) whole kernel corn with liquid
  • 1 tablespoon salt or to taste
  • 1 cup grated Cheddar or American cheese
  • 1/2 teaspoon salt
  • 2 pounds ground beef
  • 1/3 cup chopped green pepper

Instructions

  1. Bring water to a boil and add 1/2 teaspoon of salt.
  2. Slowly add the cornmeal and cook over low heat for about 5 minutes, stirring constantly.
  3. Line an 8-cup lightly greased casserole with 2/3 of the hot cornmeal mush, bringing it up the sides as much as possible. Add boiling water if the mush is too thick to spread.
  4. In a skillet, cook ground beef until browned.
  5. Add chopped onion and chopped green pepper to the beef, cooking until vegetables are tender.
  6. Stir in the can of whole kernel corn with liquid and salt.
  7. Spread the beef mixture evenly over the cornmeal crust.
  8. Sprinkle grated cheese on top.
  9. Bake at 375°F (190°C) for 15-20 minutes until cheese is melted and bubbly.
