Ingredients

  • 2 c. plain flour
  • 2 c. white sugar
  • 2 tsp. baking powder
  • 1 1/2 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 4 eggs
  • 1 1/2 c. vegetable oil
  • 1 c. chopped nuts
  • 2 (4 1/2 oz.) jars baby food apricots
  • 1 (8 oz.) can crushed pineapple
  • 1 box confectioners sugar
  • 1/2 c. butter or margarine
  • 1 (8 oz.) cream cheese

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a baking pan.
  2. In a large bowl, combine plain flour, white sugar, baking powder, baking soda, salt, and cinnamon. Mix well.
  3. Add eggs, vegetable oil, chopped nuts, apricot jars (drained), and crushed pineapple (drained). Mix until smooth.
  4. Pour batter into prepared baking pan and bake for approximately 45 minutes, or until a toothpick inserted into the center comes out clean.
  5. While the cake is baking, prepare the glaze: blend confectioners sugar, softened butter, and cream cheese until smooth. Thin with a small amount of milk if necessary.
  6. Once the cake has cooled, spread the glaze evenly over the top.
