Mistake Apricot Cake

Ingredients
- 2 c. plain flour ⓘ
- 2 c. white sugar ⓘ
- 2 tsp. baking powder ⓘ
- 1 1/2 tsp. baking soda ⓘ
- 1 tsp. salt ⓘ
- 1 tsp. cinnamon ⓘ
- 4 eggs ⓘ
- 1 1/2 c. vegetable oil ⓘ
- 1 c. chopped nuts ⓘ
- 2 (4 1/2 oz.) jars baby food apricots ⓘ
- 1 (8 oz.) can crushed pineapple ⓘ
- 1 box confectioners sugar ⓘ
- 1/2 c. butter or margarine ⓘ
- 1 (8 oz.) cream cheese ⓘ
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a baking pan.
- In a large bowl, combine plain flour, white sugar, baking powder, baking soda, salt, and cinnamon. Mix well.
- Add eggs, vegetable oil, chopped nuts, apricot jars (drained), and crushed pineapple (drained). Mix until smooth.
- Pour batter into prepared baking pan and bake for approximately 45 minutes, or until a toothpick inserted into the center comes out clean.
- While the cake is baking, prepare the glaze: blend confectioners sugar, softened butter, and cream cheese until smooth. Thin with a small amount of milk if necessary.
- Once the cake has cooled, spread the glaze evenly over the top.
