Ingredients

  • 1 cup low fat buttermilk
  • 1/2 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1/2 cup cornmeal
  • 1/3 cup molasses
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup raisins
  • Cooking spray

Instructions

  1. Spray a 2-cup glass measuring cup with cooking spray and set aside.
  2. Combine the buttermilk, all-purpose flour, whole wheat flour, cornmeal, molasses, baking soda, and salt in a mixing bowl; beat with a mixer on low speed for 30 seconds.
  3. Stir in the raisins.
  4. Pour half of the batter into the prepared measuring cup.
  5. Cover each cup loosely with wax paper.
  6. Microwave at medium (50% power) for 5 to 7 minutes or until the edges are no longer doughy, rotating a half-turn after 3 minutes.
  7. Let stand for 5 minutes.
  8. Turn the loaf out onto a wire rack.
  9. Repeat the procedure with the remaining batter.
  10. Cool the loaves.
  11. Cut each loaf into 6 round slices and serve with cream cheese if desired.
