- Spray a 2-cup glass measuring cup with cooking spray and set aside.
- Combine the buttermilk, all-purpose flour, whole wheat flour, cornmeal, molasses, baking soda, and salt in a mixing bowl; beat with a mixer on low speed for 30 seconds.
- Stir in the raisins.
- Pour half of the batter into the prepared measuring cup.
- Cover each cup loosely with wax paper.
- Microwave at medium (50% power) for 5 to 7 minutes or until the edges are no longer doughy, rotating a half-turn after 3 minutes.
- Let stand for 5 minutes.
- Turn the loaf out onto a wire rack.
- Repeat the procedure with the remaining batter.
- Cool the loaves.
- Cut each loaf into 6 round slices and serve with cream cheese if desired.
