Ingredients

  • 2 cans cream of mushroom soup
  • 2 cans cream of chicken soup
  • 1 lb. sour cream
  • 2 cans chopped green chilies
  • 3 lb. hamburger
  • 1 medium onion
  • 24 corn tortillas
  • oil (for frying tortillas)
  • 1 to 2 lb. Monterey Jack cheese, grated

Instructions

  1. Heat oven to 350°F (175°C).
  2. Fry hamburger and chopped onion until cooked; drain excess fat.
  3. Mix cream of mushroom or cream of chicken soup, sour cream, chopped green chilies, and grated cheese into the hot meat mixture.
  4. Set the meat mixture aside.
  5. Fry tortillas in oil until softened.
  6. Assemble in a long or high-sided baking dish, filling each tortilla with meat mixture and rolling it up.
  7. Fill the pan with the rolled-up tortillas.
  8. Top with any leftover meat and some grated cheese.
  9. Bake until bubbly and browned, about 1 hour.
