Ingredients

  • 1 lb. ground beef
  • 1 small onion, chopped
  • 1 small green pepper, chopped
  • 2 (10 3/4 oz.) cans tomato soup
  • 2 (16 oz.) cans red kidney beans
  • 1 (10 oz.) can Ro-Tel, diced
  • 1 Tbsp. chili powder
  • salt and pepper to taste
  • 1 Tbsp. butter or margarine
  • shredded Cheddar cheese

Instructions

  1. Brown ground beef; drain.
  2. Saute chopped onion and green pepper in butter or margarine and combine with the beef.
  3. Add tomato soup, red kidney beans, diced Ro-Tel, chili powder, salt, and pepper to the mixture.
  4. Simmer for about 20 minutes, or until the desired consistency is reached.
  5. Serve topped with shredded Cheddar cheese.
