Ingredients
- 1 lb. deer meat, cut into stew meat cubes ⓘ
- 2 Tbsp. oil ⓘ
- 2 c. chopped celery ⓘ
- 2/3 c. chopped onion ⓘ
- 1/4 c. chopped green pepper ⓘ
- 2 (14 1/2 oz.) cans beef broth
- 1 (28 oz.) can diced tomatoes (undrained) ⓘ
- 1 large potato, peeled and cubed ⓘ
- 1 large carrot, sliced ⓘ
- 2 tsp. garlic salt ⓘ
- 1 whole clove ⓘ
- 1 bay leaf
- 1/4 c. minced fresh parsley ⓘ
Instructions
- In a Dutch oven, brown deer meat in oil; drain.
- Add chopped celery, onion, and green pepper; sauté for 5 minutes or until tender.
- Stir in beef broth, diced tomatoes, peeled and cubed potato, sliced carrot, garlic salt, whole clove, and bay leaf.
- Bring to a boil.
- Reduce heat; simmer uncovered for 1 hour or until the meat is tender.
- Discard the clove and bay leaf.
- Stir in minced fresh parsley before serving.
