Ingredients

  • 1 lb hamburger meat
  • 1 small onion, chopped
  • 1 small bell pepper, chopped
  • 1 clove garlic, minced
  • salt and pepper to taste
  • oil
  • 1 small jar green olives
  • 1 package long dinner rolls
  • 1 small box cracker meal
  • 6 eggs, beaten
  • 1 small can tomato sauce

Instructions

  1. Brown hamburger meat with chopped onion, bell pepper, and minced garlic until cooked through.
  2. Drain excess fat and liquid from the meat mixture.
  3. Add green olives (smashing some with fingers), salt, pepper, and tomato sauce to the meat mixture. Cook on low heat for 10 to 20 minutes.
  4. If desired, add a small amount of olive juice to enhance flavor.
  5. Using a small knife, carefully 'pick' out a pocket in each dinner roll, leaving about 1/2 inch from the bottom and all around edges to form an envelope.
  6. Fill the hollowed-out bun with the olive and meat mixture to the top.
  7. Seal the opening with the saved crumbs from the pocket.
  8. Gently roll each filled roll in beaten eggs, then in cracker meal, repeating the process for a double coating.
  9. Deep fry the coated rolls until golden brown, or pan-fry if preferred.
  10. Drain on paper towels to remove excess oil.
