- Brown hamburger meat with chopped onion, bell pepper, and minced garlic until cooked through.
- Drain excess fat and liquid from the meat mixture.
- Add green olives (smashing some with fingers), salt, pepper, and tomato sauce to the meat mixture. Cook on low heat for 10 to 20 minutes.
- If desired, add a small amount of olive juice to enhance flavor.
- Using a small knife, carefully 'pick' out a pocket in each dinner roll, leaving about 1/2 inch from the bottom and all around edges to form an envelope.
- Fill the hollowed-out bun with the olive and meat mixture to the top.
- Seal the opening with the saved crumbs from the pocket.
- Gently roll each filled roll in beaten eggs, then in cracker meal, repeating the process for a double coating.
- Deep fry the coated rolls until golden brown, or pan-fry if preferred.
- Drain on paper towels to remove excess oil.
