Ingredients

  • 16 oz. jar marinated mixed vegetables, drained and chopped
  • 1/4 cup green olives with pimiento, finely chopped
  • 1 tablespoon olive oil
  • 1 clove garlic, chopped
  • 1/4 teaspoon leaf oregano, crumbled
  • 8-inch round loaf bread, unsliced
  • 3 oz. lean baked ham
  • 3 oz. thinly sliced deli turkey breast

Instructions

  1. Combine marinated mixed vegetables and chopped green olives in a small bowl.
  2. Heat olive oil in a small saucepan over medium-low heat.
  3. Add chopped garlic and crumbled oregano; cook for 2 minutes without browning.
  4. Halve the round loaf of bread horizontally and pull out a little bread from each half.
  5. Brush the inside of the bottom half with the oil mixture.
  6. Top with half of the vegetable mixture.
  7. Add sliced ham and turkey over the vegetables.
  8. Top with the remaining vegetable mixture.
  9. Cover with the top half of the bread.
  10. Wrap the sandwich tightly with Saran Wrap and refrigerate for at least 2 hours or overnight.
  11. Cut into wedges to serve.
