A hearty Italian-inspired salad featuring salami, cheeses, and vegetables, dressed with olive oil and mayonnaise, perfect for casual gatherings and flavorful sandwiches.

Ingredients

  • 1 1/2 lb. Genoa salami
  • 1/2 lb. Provolone or white American cheese
  • 1/2 lb. ham
  • 1 tomato
  • 1 1/2 onions
  • sweet peppers, diced
  • shredded lettuce
  • 4 Tbsp. olive oil
  • 3 Tbsp. mayonnaise
  • pinch of oregano

Instructions

  1. Dice onions small.
  2. Dice tomatoes.
  3. Cut salami, cheese, and ham roughly into 1/4-inch squares.
  4. Add all ingredients in a large bowl, then stir.
  5. Add shredded lettuce.
  6. Slowly add olive oil, checking the taste after 2 tablespoons.
  7. Spoon onto sliced Italian or French bread.
