Ingredients

Instructions

  1. Rinse, pat dry, and slice the mushrooms.
  2. Set aside the sliced mushrooms.
  3. In a large pot, heat butter and sauté the chopped onion until light golden.
  4. Add the sliced mushrooms, diced potatoes, diced carrots, salt, and pepper to the pot.
  5. Cover and simmer about 20 minutes, until vegetables are tender.
  6. In a small bowl, combine the flour and cold water to make a slurry.
  7. Stir the flour mixture into the vegetable mixture.
  8. Add chicken stock and white wine (if using), then simmer for an additional 10 minutes.
  9. Just before serving, stir in the dairy cream and heat until hot but do not boil.
  10. Serve the chowder topped with grated Parmesan cheese if desired.
