Ingredients

  • 4 chicken breasts
  • 1/2 tsp salt
  • dash black pepper
  • 1 egg
  • 2 Tbsp prepared mustard
  • 1/4 cup Parmesan cheese
  • 1/4 cup bread crumbs
  • 2 Tbsp oil
  • 1 green pepper

Instructions

  1. Wipe chicken breasts with a damp towel, then sprinkle with salt and pepper.
  2. In a bowl, beat together egg and prepared mustard.
  3. In another bowl, combine Parmesan cheese and bread crumbs, mixing well.
  4. Dip each chicken breast into the egg-mustard mixture until evenly coated.
  5. Lay chicken on wax paper and let the coating set for 10 minutes.
  6. Saute chicken on both sides in heated oil for 15 to 20 minutes or until tender.
  7. Sprinkle with sliced green pepper before serving.
