Ingredients

  • 3 eggs
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 1 cup vegetable oil
  • 2 1/2 cups grated zucchini
  • 1 teaspoon vanilla
  • 3 cups all-purpose flour
  • 1/2 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/2 cups walnuts, chopped
  • 3/4 cup raisins or dates (optional)

Instructions

  1. Heat oven to 325°F (163°C).
  2. Beat eggs until frothy.
  3. Stir in brown sugar, granulated sugar, vegetable oil, grated zucchini, and vanilla.
  4. Combine all-purpose flour, cinnamon, baking powder, baking soda, and salt; stir into zucchini mixture until well mixed.
  5. Stir in chopped walnuts and raisins or dates.
  6. Pour the batter into a well-greased Bundt pan.
  7. Bake for 1 hour.
  8. Cool for 15 minutes in the pan, then remove to a wire rack.
  9. Slice when cooled and serve.
