Ingredients

  • 2 tbsp oil
  • 1 lb ground beef
  • 1 None red pepper, seeded and cut into cubes
  • 1 None onion, peeled and finely diced
  • 14 oz can chopped tomatoes
  • 14 oz can black beans, drained and rinsed
  • None None aluminum foil
  • 2 None spring onions, finely sliced
  • 1/4 lb Monterey Jack cheese, coarsely grated
  • 1/4 lb tortilla chips

Instructions

  1. Heat the oil in a large skillet and fry the beef for 5 mins, stirring often. Add the pepper and onion and fry for 2 mins. Stir in the tomatoes and beans and simmer for 3-4 mins. Season to taste.
  2. Meanwhile, fold 4 pieces of aluminum foil (12 x 6 inch) into squares. Put a quarter of the beef mixture in the center of each square, along with a quarter of the spring onions, cheese and chips. Close the foil to make parcels and heat under the broiler long enough to melt the cheese.
