Ingredients

  • 2 Tbsp butter
  • 1/3 cup onion, chopped
  • 2 Tbsp buttermilk biscuit mix
  • 1 1/2 cups water
  • 1 (6 oz) can tomato paste
  • 1 1/2 tsp salt
  • 3 cups cooked rice
  • dash pepper
  • 1/4 tsp sugar
  • 1 bay leaf
  • 1/2 cup chopped celery
  • 1/2 cup chopped green pepper
  • 2 lb frozen shrimp, thawed, peeled, and cleaned

Instructions

  1. In a skillet, melt butter.
  2. Add chopped onion and cook slightly.
  3. Add biscuit mix and stir until well blended.
  4. Combine water, tomato paste, salt, pepper, sugar, bay leaf, chopped celery, and chopped green pepper.
  5. Add the mixture with the onion and biscuit mixture to a crock-pot.
  6. Stir well and cover.
  7. Cook on low for 4 hours and 54 minutes.
  8. One hour before serving, turn on high setting and add the thawed, peeled, and cleaned shrimp.
  9. Remove bay leaf and serve over hot fluffy rice.
